Calentado – Colombian Rice and Bean Breakfast

Calentado – Colombian Rice and Bean Breakfast

Calentado means “reheated,” a name that perfectly describes this hearty Colombian breakfast. Traditionally made with leftover rice and beans from the night before, it transforms simple ingredients into a warm, flavorful dish. Often topped with a fried egg and served alongside an arepa, calentado is a beloved way to start the day across Colombia.

Ingredients (serves 4)

  • 2 cups cooked white rice

  • 2 cups cooked red or pinto beans (with a little of their broth)

  • 1 small onion, diced

  • 1 medium tomato, diced

  • 2 Tbsp vegetable oil

  • ½ tsp ground cumin (optional)

  • Salt and freshly ground black pepper, to taste

  • 4 large eggs (optional, for topping)

  • Arepas or crusty bread, for serving

  • Fresh cilantro, chopped, for garnish

Instructions

  1. Sauté Vegetables
Heat oil in a large skillet over medium heat. Add onion and tomato; cook 3–4 minutes until soft and fragrant.

  2. Add Beans
Stir in beans with a few tablespoons of their broth. Season with cumin if using. Simmer 2–3 minutes.

  3. Mix in Rice
Add cooked rice, breaking up clumps. Stir until the mixture is evenly combined and heated through. Season with salt and pepper.

  4. Optional Eggs
In a separate pan, fry the eggs to your preferred doneness and place one on each serving of calentado.

  5. Serve
Spoon onto plates, garnish with cilantro, and serve hot with arepas or bread.

Serving Tips

  • Traditionally enjoyed with arepas and a cup of Colombian hot chocolate or café tinto.

  • Add a slice of avocado or a drizzle of hogao (tomato-scallion sauce) for extra flavor.

Pro Tips

  • Use Leftovers: Day-old rice gives the best texture.

  • Customize Beans: Any cooked beans—kidney, black, or pinto—work well.

  • One-Pan Option: Crack the eggs directly onto the rice-bean mixture, cover, and steam until set.

Storage

Refrigerate leftovers in an airtight container for up to 2 days. Reheat in a skillet over medium heat with a splash of bean broth or water.
